A perfect Summertime drink
BREVARD COUNTY, FLORIDA — Florida farmers make it easy for everyone to eat fresh produce year-round, and the Watermelon Gin Rickey is a super refreshing cocktail made with ripe summer fruit!
INGREDIENTS
■ 2 cups fresh Florida watermelon, chopped (plus more for garnish if desired)
■ 4 ounces Florida gin
■ 2 fresh limes, juiced
■ 1-ounce simple syrup
■ Mint leaves and fresh sliced lime for garnish
■ Soda water, chilled

PREPARATION
■ Rinse the blender and make sure all the parts are clean and ready to use.
■ Add the fresh watermelon and simple syrup to the blender.
■ Blend until smooth, then strain through a mesh strainer.
■ In a cocktail shaker, add 4 ounces of fresh watermelon juice, Florida gin, and lime juice.
■ Fill the shaker halfway with ice.
■ Place the top on the shaker and vigorously shake for at least 30 seconds.
■ Fill two tall Collins glasses with ice. Use an ice strainer to pour the Rickey over the tall glasses filled with ice.
■ Top each cocktail with chilled soda water and garnish with lime, mint, and fresh watermelon if desired.
